I made this recipe with leftover sweet potatoes from Thanksgiving one morning in a sleepy haze. It was delicious and we couldn’t stop eating them. The color is beautiful as well.
1 cup of all-purpose flour
1/2 tsp. of baking power
1/4 cup milk
1 large egg
a handful of pecans or your favorite nuts
1 cup of leftover candied sweet potatoes from Thanksgiving
a bit of oil to brush on the griddle
Whisk all of the ingredients in a bowl.
Scoop out about a 1/2 cup of batter in a fry pan or pancake griddle.
Cook until small bubbles emerge in the center of the pancake.
Flip each pancake over and cook a bit more.
For and extra treat, top with cinnamon whipped cream !
